Gonna start binge watching II soon

I haven’t watched II before, but I’ve heard many things about it, as a BFDI fan. However, I have 2 questions for anyone who has watched the entire series.

After II2 14, does it matter if I watched all of III before finishing S2 (which is how it canonically happened) or if I finished the season first before S3? Does it have any affects on the plot?
Should I watch the Inanimate Insanity remastered videos or the original 2011 ones?
